Using 8 belts instead of 4 just means potantially bringing more ores to your chests, allowing them to fill faster and potentially make the train wait less (if you have more miners than what 4 belts can carry). This can be "fixed" by changing the portions with only 4 belts into red belts instead as well. This is less visible on the first screenshot but on the second you can see that the belts are emptied so fast that the "outer" chests don't even have ores in them.
